Cookie Ice Cream Sandwiches
Did you know that M&M’s were some of the first candy to be flown into space? We actually saw a bag of vacuum sealed M&M’s at the Smithsonian National Air and Space Museum! Anyway, we recently made some super easy to make ice cream cookie sandwiches for game night at our place. This cookie ice cream sandwich is a definite crowd pleaser!
Ingredients
2 1/4 cups all-purpose flour
1 teaspoon baking soda
1 cup (2 sticks) softened butter
3/4 cup granulated sugar
3/4 cup packed brown sugar
1 teaspoon vanilla extract
2 large eggs
2 cups chocolate candies
vanilla ice cream

For the cookies, we recommend following your favorite chocolate chip cookie recipe and substitute M&M’s for the chocolate chips. We followed the basic Tollhouse cookie recipe.

When you bake these cookies, make sure not to over bake them. Since they’ll be frozen as part of the ice cream sandwich, you want them to be cooked but still soft. Since our recipe said to cook for 9-11 minutes, we cooked these for 8-9 minutes.

Let the cookies cool completely and store in an air tight container.

When ready, take a tub of vanilla ice cream out of the freezer and leave it out for a few minutes so that it is easy to scoop. Place half of the cookies face down and scoop the vanilla ice cream on top.

Press a second cookie on top of the ice cream, and voila, you made an ice cream sandwich!

Place the ice cream sandwiches back in the freezer in an air tight container, at least for a few minutes. We found out if you get impatient and eat the ice cream sandwiches immediately, the ice cream kind of squeezes out. Still delicious, but a little messy.
